National Jobsite Catering provides about 1,500 meals daily at each of its dozen data center construction sites across Northern Virginia, Texas, Ohio, Louisiana, Nevada, and Georgia. The company's founder, Scott Kaplan, said the busiest sites serve twice as many meals. At 5 a.m. in Northern Virginia, chefs prepare dishes such as chicken and chile roja enchiladas, fried shrimp tacos, and rice and beans for thousands of workers. The meals are funded by Big Tech companies investing billions in AI infrastructure, and workers do not pay for their food.
